The Carbondale Beat serves wholesome vegetarian fare. With the aim to use 80-95% organic products and by prioritizing local ingredients, dishes will change day to day. The Beat’s meals reflect local farmer’s availability in order to better support them and serve the freshest of fresh food.

We appreciate each and every member of our team equally and value their dedication to The Beat’s place in this community. Our number one goal is for everyone to enjoy our space and leave happy and satiated.

The Beat’s origin story is truly a family affair. For 13 years, Cathy Britt operated Dancing Colours – a well-renowned boutique that supplied locals and visitors with a unique array of gifts, curated for those you love the most. 11 years later, Tobyn, Cathy’s son, took over a section of the building to operate a juice and smoothie shop.

Lucy Perutz, a self-taught chef who hails from Chicago and Telluride, met Tobyn in 2015 while they were each individually slinging delicious goods at 5 Point Film Festival and were married within 12 days. This whirlwind romance is a love story of mountain town foodies with purpose.

Together with Tobyn’s father, Jeff “El Chefe” Britt, they’ve fully renovated the family-house-boutique-smoothie-shop into a fresh and fun lunch (and soon to be dinner!) spot in the heart of Carbondale.

Boasting handcrafted cocktails, beer, cider, wine, and lattes too, they transformed the quaint family home into a gourmet restaurant and bar. With a team of dedicated localvores, The Beat is the product of years of love, family and food.
